Logging outgoing mails

Problem you are having:

I get some feedback from people inviting me to meetings that they sometimes don't get any response when I accept or deny the invitation. So it would be good if there would be a way to find out if an e-mail has actually been sent when I accepted or denied the invite.

Suggested solution:

Write a log file about all sent (or failed) e-mails. This can be configurable so it can be turned off if not required.
